Brown Rice Stuffed Acorn Squash
Squash serves as an elegant and edible vessel for this pleasantly spiced brown rice dish that’s perfect for dinner. Acorn squash boasts ample amounts of Vitamin C, carotenoids and fiber to reduce cancer risk, regulate blood sugar and reduce cholesterol levels.
The brown rice featured in this recipe, is a budget-friendly nutritional powerhouse. It is a great source of energy, an excellent source of vitamin B1 (which helps maintain a healthy nervous system and cardiovascular health) and high in soluble & insoluble fiber which help regulate and improve bowel movements and keeps you feeling full and satisfied..
Millet and Cauliflower Puree
Love the taste of mashed cauliflower, but need just a little more when it comes to the satisfaction department? This dish features the addition of millet to add extra fiber, antioxidants and magnesium to help you lower your triglycerides and reduce inflammation, and blood sugar management.
Cauliflower is loaded with Vitamins C for strong bones, skin and immune system. It’s also rich in folate which is good for brain health and reducing the risk of dementia as you age. Cauliflower is known to be one of the better sources of choline to help increase metabolism and reduce cholesterol.
Mushroom and Barley Soup
Adding grains to a soup is a great way to stretch your budget, creating a fiber-packed bowl of warm and steamy goodness. Barley is a great source of both soluble and insoluble fiber and Vitamin B to help lower cholesterol, promote good digestion, lower blood sugar levels and to give you the energy to power through your day!
