Savory Grab and Go Muffins
These savory vegetable muffins are a breeze to create, and overflowing with whole grains, healthy fats, and plenty of nourishing goodness! Making these with whole wheat flour means they will provide your body with much needed B-vitamins, iron, folate, calcium, and protein; all of which can help with energy, stamina, metabolism, and ultimately sustainable weight loss.
To the whole grain base we’ll be adding four different varieties of vegetables which will flood your system with even more vitamins and immune-boosting antioxidant compounds. Light and fluffy, these are the perfect (and simplest!) solution to get in more vegetables at every meal, and they are perfect to pack for lunch, grab for a snack, or enjoy as a simple side dish to any dinner.
Banana Nut Cookies
These healthy banana nut cookies are chewy and soft, especially when warm, and can be made from just 3 ingredients– though we added a couple extra for extra flavor! It’s up to you what nut you choose to use, though walnuts provide a wonderful texture and are also extremely rich in antioxidants and omega 3s- two key compounds that are crucial when looking to decrease inflammation.
Bananas provide our binding and a natural sweetness, keeping this cookie free of refined sugars and saturated fats. Oats of course take the place of refined flours, and bring in much more dietary fiber that will help with digestion and better control of blood sugars. Oats are one of our favorite ingredients to use when looking to stay on track with weight loss and heart health goals, and if you choose gluten free oats, this treat is vegan and gluten free, making it the perfect snack for all needs and palates.
Rice Crispy Treats
These vegan rice crispy treats have a crispy, crunchy texture with a nutty caramel taste. They’re just the right balance of sweet, so they’ll satisfy any craving without going overboard. More importantly, they’re packed with healthy fats, whole grains, and protein; so you will feel nourished from this snack without needing extras!
Brown rice crisps will provide more fiber, minerals, and vitamins compared to white rice, and this will add greatly to the staying power of this snack. Together, the nut butter and maple syrup will combine to create a sticky mixture that acts as a substitute for marshmallows. This way, you can still enjoy this nostalgic dessert without using processed marshmallows or refined sugars that will only add to cravings rather than satisfaction.
I look forward to hearing which of these recipes please the palate, and become a new snack staple in your home! 😃
