Week 8 – Complete your Weekly Challenge

Make an abundant, fresh, seasonal salad to eat for 4 workday lunches this week. The key is to make it BIG – at least 3-4 cups of greens & then add your extras veggies and protein on top, and a really delicious, homemade dressing made with real extra virgin olive oil on the side – ready to pour right before you eat – Yum!  Complete the Discussion Questions attached below & upload your photos from last week.

BUILD ON IT:  Continue to enjoy Homemade Smoothies and Homemade Breakfasts as often as you can.  And try to cook something using your oven this week – Perhaps you can roast an ingredient for your salads? For example, bell peppers, cherry tomatoes, sweet potato, meat and nuts all work great in salads.

TIPS FOR SUCCESS

  • You can select your 2 favorite salad recipes and make 2 serves of each of those.
  • You can select one or two ingredients to roast and add to your salads.  Simply pop them in the oven while you chop ingredients for your salad, so it doesn’t need to take any extra time.
  • Apply the principles of flavor balancing to your salads (think of including sweet, salty & sour ingredients to your salad – the bitter comes from the greens and the fat comes from the olive oil, nuts or avocado).
  • Building a habit of eating an abundant, vibrant, living Homemade Salad with a rainbow of colors everyday for lunch is one of the absolute best things you can do for long term health improvement, weight loss & maintenance.
