Roasted Butternut Squash with Sage

Ingredients

  • 1 each Butternut Squash, peeled and seeds removed, cut into 1” slices
  • ⅓ cup Olive Oil
  • 10 - 15 each Sage leaves
  • to taste Salt and Pepper

Instructions

Preheat oven to 450°F

  • 1)

    In a roasting or sauté pan, drizzle the squash with olive oil, salt and pepper.

  • 2)

    Roast in oven, turning occasionally, for about 30-40 minutes.

  • 3)

    When the squash begins to turn brown on all sides, add the sage leaves tossing them in olive oil, and continue to cook for another 5 to 10 minutes until the sage leaves are crisp. Serve hot.

Notes

~ This is a great dish to cook alongside roast chicken, turkey, or pork. If need be, you can lower the temperature and slightly increase the cooking time.

~This roasting technique can be used for a variety of other vegetables and seasonings. To go along with butternut squash, consider beets, parsnips, carrots, and sweet potato.
