Gazpacho

Ingredients

  • 4 Cups Cold Tomato Juice
  • 1 Onion (Small), Peeled And Finely Chopped
  • 2 Cups Tomato, Chopped
  • 1 Cup Red Pepper, Seeded And Finely Chopped
  • 1 Tsp Honey
  • 1 Garlic Clove, Crushed
  • 1 Cucumber, Diced
  • 2 Scallions
  • ½ Lime, Juiced
  • ½ Lemon, Juiced
  • 2 Tbsp White Wine Vinegar
  • 1 Tsp Basil Leaves, Fresh
  • 1 Tsp Tarragon Leaves, Fresh
  • Pinch of Ground Cumin
  • ¼ Parsley Leaves, Fresh
  • Dash of Hot Sauce
  • 2 Tbsp Olive Oil
  • Salt And Pepper, To Taste

Directions

  • 1)

    Combine all the ingredients in a high-speed food processor or blender. Blitz on high speed puree until desired consistency.

  • 2)

    Either serve immediately or refrigerate to chill a little longer and serve super cold.
