Mediterranean Turkey Burgers with Yogurt Sauce

Ingredients

Ingredients For Turkey Patties; Serves 4

  • 16 Oz Lean Ground Turkey
  • 1 Small Shallot, Minced
  • 1 Tsp Granulated Garlic
  • 1 Tsp Salt
  • 1 Tsp Dried Oregano
  • ½ Cup Feta, Crumbled
  • 5 Oz Frozen Spinach, Thawed
  • 1 Tbsp Olive Oil
  • 1 Tbsp High Smoke Point Oil

Ingredients For Yogurt Sauce

  • ¾ Cup Plain Greek Yogurt, 2%
  • 1 Small Persian Cucumber
  • 1 Small Garlic Clove
  • 1 Tb Dill, Minced
  • Salt And Pepper, To Taste

Toppings

  • 2 Large Whole Wheat Pitas
  • 2-3 Cup Romaine Lettuce, Chopped
  • 1 Cup Cherry Tomatoes, Halved

Directions

  • 1)

    Preheat your oven to 375F.

  • 2)

    In a large bowl, gently mix together all the ingredients for the turkey burger patties save for the high smoke point oil, using your hands to break up the meat, mix, and form 8 patties, roughly 2oz each.

  • 3)

    Place a cast iron or stainless steel pan over high heat, adding the high smoke point oil and heat until it shimmers.

  • 4)

    Gently place burger patties down with about a half inch space around each one.

  • 5)

    Cook for two minutes, then flip and slide into the oven for another 3-4 minutes until patties are cooked through- a thermometer in the thickest part should read 165F.

  • 6)

    Allow patties to rest, while you prepare the sauce.

  • 7)

    Leaving the skin on, grate your persian cucumber on the finest grate your cheese grater has. If threads are too thick or long still, run a knife through them in a mincing motion to finish off.

  • 8)

    Zest the garlic clove, and add that to the yogurt along with the grated cucumber, and minced dill. Season to taste with salt and pepper.

  • 9)

    To make the burgers, heat your pitas for a few minutes in the oven, then cut in half and open to create pockets.

  • 10)

    Fill the pockets with chopped lettuce, onion, tomato slices, and two turkey patties each. Top with yogurt sauce and dig in!
