Black Bean and Zucchini Chocolate Brownies

Ingredients

  • ½ Cup Butter, Softened
  • ½ Cup Macadamia Nut Oil, (Or Avocado Oil)
  • 1 Cup Coconut Sugar
  • 2 Large Eggs
  • 1 Tsp Vanilla
  • ¾ Cup Yogurt, Natural Plain
  • ½ Cup Canned Black Beans, Drained And Mashed Well Until Smooth
  • 2 ½ Cups Self-raising Flour, Unbleached And Organic If Possible
  • ⅓ Cup Cacao
  • ½ Tsp Cinnamon
  • 2 Cups Zucchini, Grated
  • ⅓ Cup Chocolate Chips, (Optional)

Directions

  • 1)

    Preheat oven to 350F.

  • 2)

    In a glass mixing bowl, cream together the butter oil and sugar.

  • 3)

    Add eggs, vanilla, yogurt and mashed black beans, beat together well.

  • 4)

    Sift all dry ingredients into a large separate mixing bowl. Add the wet ingredients and beat well to combine.

  • 5)

    Add the zucchini and fold through evenly.

  • 6)

    Pour the batter into a lightly greased and lined 13 x 9 pan. Sprinkle with chocolate chips. Bake in preheated oven for 35 minutes or until done.
