You know that saying, “You can’t please everyone.” Well, this recipe is the exception to the rule!! You really can’t go wrong with this Zesty Loaded Nacho sheet pan dish.

This is especially a great meal option for the picky eaters in your life because you can add in so many healthy ingredients and even the most resistant food critics will succumb to the cheesy deliciousness fresh out of the oven.

They’ll forget all about the added protein in the black beans, the healthy fat in the avocado, and the boost of vitamins and minerals in the tomatoes and red onions!! In fact, the sky’s the limit with how many nourishing ingredients can be added to this dish!

Zesty Loaded Nachos

Ingredients: Serves 4

  • 8 Oz Tortilla Chips, Plain
  • 8 Oz Shredded Cheese
  • 8 Oz Canned Black Beans, Drained And Rinsed
  • 1 Large Avocado, Cubed
  • 1 Jalapeno Pepper, Sliced
  • 1 Red Onion, Peeled And Finely Sliced
  • 1 Large Tomato, Finely Diced
  • ¼ Cilantro, Finely Chopped
  • ⅓ Cup Plain Greek Yogurt

Directions

  • 1)

    Place the tortilla chips on a lined sheet pan/baking dish in a single layer. Sprinkle with the shredded cheese and bake in preheated oven at 350 degrees until the cheese is melted and golden, approximately 3-4 minutes.

  • 2)

    Remove from the oven and top with the black beans, avocado, jalapeno, onion, tomato and cilantro.

  • 3)

    Dollop over the Greek yogurt and serve immediately.
