Mexican Quinoa Avocado Boats

Ingredients

  • 3 Large Avocados
  • 1 Red Chili, Stemmed Seeded And Sliced
  • ½ Cup Canned Kidney Beans (Or Black Beans), Drained and rinsed
  • ⅓ Cup Canned Corn Kernels, Drained And Rinsed
  • ¼ Cup Red Bell Pepper, Seeded And Diced
  • ⅓ Cup Cherry Tomatoes, Cut Into Quarters
  • 1 Scallions, Sliced
  • 1 Cup Cooked Quinoa
  • 2 Tbsp Fresh Cilantro, Chopped
  • 2 Tbsp Olive Oil
  • 2 Tbsp Lime Juice, Freshly Squeezed
  • ¼ Tsp Cumin Seeds, Toasted
  • Salt And Pepper, To Taste

Directions

  • 1)

    Cut the avocados in half and remove the seed. Gently scoop out some of the flesh if you think you need a larger hollow (if the seed was only small) to fill your avocado with the filling.

  • 2)

    Add all remaining ingredients in a bowl.

  • 3)

    Heat a splash of olive oil in a large skillet over medium heat. Briefly toss together your Mexican filling mixture, just enough to heat the mixture through. Alternatively, you can serve the mixture cold if preferred.

  • 4)

    Fill each avocado “boat” with the mixture, adjust seasonings to taste and serve immediately.
